- 8 ea. russet potatoes
- 1 ea. yellow onion (green onion can be substituted)
- 4 ea. eggs, hardboiled
- 1 ea. Avocado From Mexico, halved, pitted, peeled, and mashed
- Salt and pepper to taste
- Peel and boil potatoes until fork tender. Let cool and cut into small cubes.
- Chop raw onion and boiled eggs.
- Peel and mash the avocado.
- Mix all the ingredients together. Season to taste with salt and pepper.
