Ingredients

  • 8 ea. russet potatoes
  • 1 ea. yellow onion (green onion can be substituted)
  • 4 ea. eggs, hardboiled
  • 1 ea. Avocado From Mexico, halved, pitted, peeled, and mashed
  • Salt and pepper to taste

Instructions

  1. Peel and boil potatoes until fork tender. Let cool and cut into small cubes.
  2. Chop raw onion and boiled eggs.
  3. Peel and mash the avocado.
  4. Mix all the ingredients together. Season to taste with salt and pepper.
