- 2-1/2 c. bittersweet chocolate chips
- 2 ea. Avocados From Mexico, cut into thirds
- 1 c. coconut, grated
- Place grated coconut in a small bowl.
- In a microwave safe bowl, heat the chocolate chips for 1-2 minutes in the microwave, or until melted, stirring every 30 seconds.
- Dip half of each slice of avocado in chocolate and then dip into coconut. Let cool and serve.
