Ingredients
- 9 ea. scallions, thinly sliced
- 4 ea. medium Avocados From Mexico, diced
- 1 c. roasted peanuts, roughly chopped
- 1 c. baby arugula
- 1 ea. pint cherry tomatoes, halved
- 1 ea. jalapeño, minced
- 1/2 ea. lime, juiced
- 1/4 ea. head green cabbage, shredded
- 1/4 c. cilantro, minced
- 1 T. mint, minced
- 1 T. sugar
- 1 T. ginger, grated
- 2 t. Sriracha hot sauce
- 2 t. salt
- 1-1/2 t. white wine vinegar
- 3/4 t. Chaat masala
- 1/4 t. ground cumin
- 1/4 t. pepper
- 1 pinch cayenne pepper
Instructions
- In a medium bowl, whisk together lime juice, sugar, ginger, sriracha, vinegar, chaat masala, cumin, cayenne pepper, jalapeño, cilantro, mint, salt, and pepper until well combined.
- In a medium bowl combine cabbage, arugula, scallions, avocados, and cherry tomatoes; gently toss with dressing and top with peanuts.
