- 1 ea. Avocado From Mexico, cubed
- 1 bag Simply TOSTITOS® Organic Blue Corn Tortilla Chips
- 1/2 lb. (16 oz.) rotisserie chicken, cooed, skinless and shredded
- 1/2 c. BBQ sauce
- 1 c. pineapple chunks
- 1 T. cilantro, chopped
- 1 ea. lime, cut into wedges
- shredded purple cabbage (optional topping)
- Shred chicken and combine with BBQ sauce in a medium bowl. Set aside.
- Gently combine pineapple and avocado into BBQ chicken mixture.
- Place 1 TB of BBQ chicken mixture on each Tostitos® chip and squirt with lime juice. Sprinkle cilantro and cabbage, as desired.
