Ingredients
- Pasilla Chile Marinated Skewers:
- 20 ea. 6-inch bamboo skewers soaked in water
- 10 ea. slices bacon
- 2 lb. beef tenderloin flank steak, or flat iron steak, cut into 3/4-inch cubes
- 3 ea. pasilla chiles, stemmed
- 1 ea. red onion, chopped
- 1/2 c. cilantro leaves, loosely packed, finely packed
- 1/2 c. water
- 5 ea. cloves garlic, peeled
- 2 T. fresh lime juice
- 2 T. olive oil
- 1 T. Worcestershire sauce
- 1-1/2 t. kosher salt
- 1/4 t. ground cumin
- Monster Dip:
- 1 ea. Avocados From Mexico
- 1 ea. 15-ounce can of pumpkin purée
- 1 ea. small onion, finely diced
- 1-1/2 t. lime juice
- 1-1/2 t. lemon juice
- 3/4 t. red chili powder
- 1/2 t. garlic powder
- 1/2 t. ground cumin
- 1/2 t. onion powder
- 1/2 t. pepper
- 1/4 t. salt
Instructions
- Monster Dip: In a medium bowl, mash the avocados until smooth. / Fold in pumpkin purée, onions, lime juice, lemon juice, chili powder, garlic powder, cumin, onion powder, pepper and salt until well combined.
- Pasilla Chile Marinated Skewers: To Make Pasilla Chile Marinade: Toast chiles on a heated dry skillet over low heat, turning often and pressing down with tongs, 2-3 minutes or until fragrant and pliable. / Tear into pieces and place in blender with onion, water, garlic lime juice, olive oil Worcestershire sauce, salt and cumin. Blend about 2 minutes or until smooth. / To Make Skewers: place the bacon on a microwave-safe plate between 2 sheets of paper towels and microwave for 2 minutes to par-cook (bacon should still be pliable). / Cut each strip into 4-5 pieces, 1-inch in length. Alternately thread 2 pieces bacon and 2 pieces beef onto each skewer and arrange on parchment or plastic wrap on a tray in one layer. / Generously brush pasilla chile marinade on all sides of beef with and refrigerate 10 minutes to 2 hours. / Heat a grill or griddle and brush with oil. / Grill skewers 1 to 1-1/2 minutes on both sides. / Sprinkle with cilantro and serve with Monster Dip.
