Ingredients

  • 2 ea. Avocados From Mexico, ripe
  • 1 ea. honeydew melon, ripe, and large
  • 1 ea. cantaloupe melon, large
  • 1 ea. watermelon, small
  • Serrano-Lime Vinaigrette
  • 1/4 c. olive oil
  • 4 T. lime juice, (about 1 lime)
  • 1 ea. serrano pepper, seeds and veins removed, sliced thin
  • 1 ea. shallot, large, sliced thin
  • Salt and pepper, to taste

Instructions

  1. To make dressing: Combine oil, mango, min, chili powder, lemon and honey in a food processor and blend until smooth. Add water to desired consistency. Refrigerate and set aside until ready to serve.
  2. Slice the honeydew and cantaloupe in half and scrape out the seeds with a spoon. Slice the watermelon in half. Using a melon baller, press down firmly and twist to scoop out melon balls. Place the melon balls into a bowl.
  3. Slice the avocados in half and remove the pit. *Using the melon baller, with a little less pressure, twist and scoop the avocado from their skins. *If you prefer to cube the avocados, that is fine too. Place the avocado balls in a separate bowl from the melon.
  4. Carefully assemble the melon balls with the avocado on to skewers so there is 1 flavor of each melon +avocado. Place on a serving tray and drizzle dressing over skewers (or serve on the side as a dip).
