Ingredients
- 1 T. butter
- 6 ea. large eggs
- 1/4 t. salt
- 1/4 t. pepper
- 4 ea. 8-inch flour tortillas, warmed
- 4 ea. slices of ham
- 1/2 c. sharp cheddar cheese, slices
- 1/4 c. salsa
- 1 ea. Avocado From Mexico, pitted, peeled, & sliced
Instructions
- In a medium bowl, beat eggs with salt and pepper.
- Heat butter in a large skillet over medium heat. Add eggs and cook until set or to desired doneness, stir continuously.
- On each tortilla, place one slice each of ham and cheese; top with eggs, avocados, and salsa; roll up tightly.
