Ingredients
- Blackened Seasoning:
- 2 T. salt
- 2 T. pepper, coarse ground
- 2 T. cayenne pepper
- 2 T. garlic powder
- 2 T. onion powder
- 2 t. ground thyme
- Creamy Spicy Taco Sauce:
- 1-1/2 ea. Avocados From Mexico, halved, pitted, & peeled
- 3/4 c. sour cream
- 1 ea. lime, juiced
- 1/2 ea. lime, zested
- 2 T. unsalted butter, melted
- 1 T. blackened seasoning
- 1/2 T. hot sauce
- Cajun Boil:
- Water
- 1-1/2 c. pickled jalapeño brine
- 2 ea. lemons, halved
- 2 ea. bay leaves
- 1 T. whole black peppercorns
- 12 ea. red potatoes
- 2 ea. ears of corn, cleaned & halved
- 1/2 c. blackened seasoning
- Red Potato Guacamole:
- 3 ea. Avocados From Mexico, pitted, peeled, & diced
- 12 ea. red potatoes from Cajun boil, halved & sliced 1/2-inch thick
- 2 ea. ears of corn from Cajun boil, kernels removed
- 4 oz. Andouille sausage, cooked & sliced
- 2 ea. jalapeños, roasted & finely diced
- 1-1/4 c. sweet onion, finely diced
- 1-1/4 c. celery, finely diced
- 1-1/4 c. cilantro, finely chopped
- 1/8 c. sweet pimentos, finely diced
- 1/8 c. green onion, finely chopped
- 1 c. creamy spicy taco sauce
- 1 t. blackened seasoning
Instructions
- Blackened Seasoning: In a small bowl, add the salt, pepper, cayenne pepper, garlic powder, onion powder, and ground thyme until well combined.
- Creamy Spicy Taco Sauce: In a small bowl, mash the avocados until smooth. Fold in sour cream, lime juice, lime zest, melted butter, blackened seasoning, and hot sauce until well combined.
- Cajun Boil: In a large pot, combine the water, pickled jalapeño brine, lemons, bay leaves, and peppercorns. Add potatoes and cook for 10 minutes until potatoes are almost fork tender.
- Add the corn and cook for 8 minutes, until potatoes are fork tender and corn is fully cooked.
- Strain and discard boiling liquid.
- Sprinkle Blackened Seasoning over potatoes.
- Red Potato Avocado Guacamole: In a large bowl, add the avocados, potatoes, corn, sausage, jalapeños, onions, celery, cilantro, pimentos, and green onions. Season with Blackened Seasoning and fold in Creamy Spicy Taco Sauce until well combined.
