Ingredients
- Avocado Popsicles:
- 4 each Avocados From Mexico peeled and pitted
- 1 1/2 cups heavy cream
- 3/4 cups honey
- chocolate shell:
- 2-1/2 cups 60% dark chocolate
- 1 cups coconut oil
- final assembly:
- 24 each avocado popsicles
- 3 1/2 cups chocolate shell:
Instructions
- Avocado Popsicles: Purée avocados, honey and cream until smooth. Run through a chinois. Pour avocado mixture into popsicle molds; freeze until solid.
- Chocolate Shell: Melt the chocolate. Whisk in coconut oil; hold at room temperature.
- Final Assembly: Dip avocado popsicles halfway into chocolate shell; allow shell to harden. Serve immediately.
