Ingredients
- 24 small tender potatoes
- 1/3 cup olive oil
- Salt and pepper to taste
- 2 hass avocados
- 1 tablespoon cilantro
- 1/4 cup heavy cream
- 2 tablespoons sour cream
- 1 teaspoon lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 350F.
- Place greaseproof paper on an oven pan.
- In a bowl, add potatoes, olive oil, salt and pepper to taste, toss.
- Place the potatoes in the pan and bake for 40 minutes or until cooked.
- In a food processor add the avocado, cream, sour cream, cilantro, lemon juice, olive oil, salt and pepper to taste.
- Process until a smooth mixture is obtained.
- Make a hole to each potato with a spoon and fill it with avocado. Garnish with cilantro and serve.
