Twist-up your next nacho recipe with sweet potatoes! Drizzled with avocado line ranch and topped with cheese, bacon and chives, these Avocado Sweet Potato Nachos are the ultimate way to impress your guests.
Ingredients
- 2 ea. Sweet potatoes, sliced
- 1 c. White cheddar cheese, shredded
- 3 ea. Slices of bacon, crumbled
- 3 T. Avocado oil
- 2 T. Chives, chopped
- Salt and pepper, to taste
- Avocado Lime Ranch
- 1/4 ea. Avocados From Mexico
- 1/4 c. Milk, 2%
- 1/4 ea. Ranch seasoning envelope
- 1 t. Cilantro, fresh
- 1 t. Jalapeno, minced
- 1/2 t. Lime juice
- Salt and pepper, to taste
Instructions
- Preheat oven to 425ºF degrees and prepare a baking sheet with foil.
- In a large bowl, add sweet potatoes and avocado oil. Toss together until the sweet potatoes are fully coated in oil.
- Evenly spread the sweet potatoes out on the baking sheet and salt and pepper to taste. Bake for approximately 35 minutes.
- In a blender, add avocado, milk, ranch seasoning, cilantro, jalapeno, lime juice and salt and pepper to taste. Blend to make avocado lime ranch.
- Transfer the sweet potatoes onto a large plate and evenly sprinkle with cheese.
- Microwave the sweet potatoes for approximately 45 seconds or until the cheese is melted to make sweet potato nachos.
- Top the sweet potato nachos with bacon, chives, and drizzle with avocado-lime ranch.
