Ingredients

  • 1 lb large shrimp, raw, shelled, deveined
  • 1/2 cup spicy barbeque sauce
  • 8 wooden skewers
  • 2 fresh limes, quartered
  • Tomatillo Salsa
  • 6 oz fresh tomatillos – husked, rinsed, sliced
  • 2 clove garlics
  • 1 jalapeno pepper, seeded, diced
  • 2 medium Avocados From Mexico, diced
  • 1 tb lime juice
  • 1/4 cup cilantro, fresh, chopped

Instructions

  1. Soak wooden skewers in water for 30 minutes prior to use
  2. Combine shrimp with barbeque sauce and limed juice and toss to coat. Set aside in the refrigerator until ready to grill.
  3. To make salsa: Place tomatillos, garlic, jalapeno pepper, avocado, lime juice and cilantro in a food processor and process until smooth. Season to taste. Transfer to a serving bowl.
  4. Heat grill to medium-high heat. Thread shrimp on to skewers prior to cooking. Place on heated grill and cook on each side for 3-6 minutes per side or until shrimp is cooked through. Remove from grill immediately. Serve with tomatillo salsa and lime wedges.
