  • 1/2 c. red onion, diced
  • 1/4 c. parsley, chopped
  • 2 T. pecans, chopped
  • 2 t. lemon juice
  • Salt to taste
  • Pepper to taste

  1. In a large bowl, place spinach, quinoa, tomatoes, avocados, onions, and parsley. Drizzle lemon juice and season with salt and pepper as desired. Toss until well combined and garnish with pecans.
