2 ea. Avocados From Mexico, halved, pitted, & peeled
3 T. white onion, finely chopped
2 T. cilantro, finely chopped
2 T. jalapeño or serrano chile, minced
2 T. lime juice
1 t. salt
Dry BBQ Rub: In a small bowl, add the spices and mix until well combined.
Peaches: Preheat grill over medium heat; brush with oil. Season peaches with Dry BBQ Rub. Grill for 2 minutes on each side. When cooled, chop roughly.
Guacamole: In a medium bowl, mash the avocados to desired consistency. Fold in the onions, cilantro, jalapeño, lime juice, and salt until well combined. Top with grilled peaches.
