Ingredients
- Dry BBQ Rub:
- 2 T. dry mustard powder
- 1/2 c. brown sugar
- 1 t. onion powder
- 1 t. garlic powder
- 1 t. smoked paprika
- 1 t. cayenne pepper
- 1 t. salt
- 1 t. pepper
- Peaches:
- 1 c. fresh peaches, sliced
- 1/4 c. Dry BBQ Rub
- 1 T. vegetable oil
- Guacamole:
- 2 ea. Avocados From Mexico, halved, pitted, & peeled
- 3 T. white onion, finely chopped
- 2 T. cilantro, finely chopped
- 2 T. jalapeño or serrano chile, minced
- 2 T. lime juice
- 1 t. salt
Instructions
- Dry BBQ Rub: In a small bowl, add the spices and mix until well combined.
- Peaches: Preheat grill over medium heat; brush with oil. Season peaches with Dry BBQ Rub. Grill for 2 minutes on each side. When cooled, chop roughly.
- Guacamole: In a medium bowl, mash the avocados to desired consistency. Fold in the onions, cilantro, jalapeño, lime juice, and salt until well combined. Top with grilled peaches.
