  • 3 ea. Avocados From Mexico, halved, pitted, & peeled
  • 4 ea. Serrano chiles, seeded & finely diced
  • 1/2 ea. medium red onion, finely diced
  • 1/4 c. cilantro, finely chopped
  • 2 T. lime juice
  • Salt to taste
  • Pepper to taste
  • Tomato and Applewood Bacon Topping:
  • 2 ea. roma tomatoes, seeded & diced small
  • 3 ea. Serrano chiles, seeded & finely diced
  • 1 T. cilantro, finely chopped
  • 3 T. olive oil
  • Salt to taste
  • Pepper to taste
  • 4 ea. strips of Applewood smoked bacon, cooked & crumbled
  • 1/4 c. cottage cheese, crumbled

Instructions

  1. Guacamole: In a large bowl, mash the avocados until chunky-smooth.
  2. Fold in Serrano chiles, red onions, cilantro, and lime juice. Season with salt and pepper.
  3. Tomato and Applewood Bacon Topping: In a small bowl, add the tomatoes, Serrano chiles, cilantro, and olive oil; mix until well combined. Season with salt and pepper.
  4. Fold in bacon and cheese.
  5. Top over guacamole.
