Protein-Powered Avocado Toast

Boost the protein in your favorite avocado toast recipe including beans mashed into your avocado mixture. Beans contribute additional dietary fiber and nutrients. Serve this vegetarian choice at breakfast or as a hearty snack.

Ingredients

  • 1 ea. Avocado From Mexico
  • 1 c. cannellini beans, drained & rinsed
  • 1 T. lemon juice
  • 1 T. whole grain Dijon mustard
  • Salt to taste
  • Pepper to taste
  • 4 ea. slices of whole grain bread, toasted
  • 2 T. basil, roughly chopped

Instructions

  1. In a medium bowl, mash together avocado, beans, lemon juice, mustard, salt and pepper.
  2. Spread avocado mash on toast and garnish with basil.
