Ingredients
- Burrito:
- 3 ea. large flour tortillas
- 1/2 lb. lean ground turkey
- 1 ea. large sweet potato, diced in small cubes
- 1 ea. medium yellow onion, minced
- 1 T. olive oil
- 1 t. cumin
- 1/2 t. salt
- 1/2 t. pepper
- Avocado Pico de Gallo:
- 1 ea. Avocados From Mexico, diced
- 2 ea. roma tomatoes, diced
- 1/2 c. red onion, diced
- 1 ea. jalapeño, minced
- 2 T. fresh lemon juice
- 1 t. chopped cilantro
- 1/2 t. salt
Instructions
- Burrito: In a large saucepan, heat the olive oil over medium heat. Add the onion and sauté for about 4 minutes or until tender. / Add the ground turkey and cook for approximately 7 minutes or until it is no longer pink. / Add the sweet potato, cumin, salt and pepper. Stir and cook until the potatoes are tender, about 8-10 minutes. / Remove from heat and let cool for 5 minutes. / Divide the mixture equally among the three tortillas, placing the mixture in the center of each tortilla. Fold over the sides and roll up the tortillas.
- Avocado Pico de Gallo: In a medium bowl, combine all the ingredients. Stir until well mixed. / Evenly distribute into three bowls and serve with burritos.
