Frankenstein Avocado Toast

  • 1 ea Wheat bread, toasted
  • 1 ea Avocados from Mexico, mashed
  • 8 ea Black olives, drained, quartered
  • 2 ea Eggs, hard boiled, thin sliced
  • 2 ea Black olives, drained, sliced
  • 1 ea Red pepper, strips, roasted, drained
  • 4 ea Pretzel sticks, broken
  • Mashed Avocado
  • 1 ea Avocados from Mexico
  • 1 t. Lemon juice
  • 1/8 t. Kosher salt

Mashed Avocado

  1. Remove stem from avocado.
  2. Cut avocado in half from top to bottom.
  3. Twist one half of the avocado to pull two halves apart.
  4. Remove pit from avocado.
  5. Scoop out the pulp from the avocado and place into a large bowl.
  6. In a large bowl, gently mash the avocados with lemon juice and salt.
  7. Transfer to a clean serving dish.
  8. Serve as needed.

Frankenstein Avocado Toast

  1. Place wheat grain toast onto a flat surface.
  2. Spread mashed avocado across entire toast.
  3. Add black olives to the top of the toast to replicate hair.
  4. Place hard-boiled egg slices onto the center of the toast.
  5. Place sliced black olives on top of hard-boiled eggs to replicate eyeballs.
  6. Place roasted red pepper strips onto toast to create a mouth.
  7. Place broken pretzel sticks onto the upper left-hand corner of the toast to create stitches.
  8. Serve as needed.
