Ingredients

  • 4 c. Bulger, cooked
  • 2 c. Chickpeas, cooked
  • 2 c. Cucumber, diced
  • 2 c. Parsley, chopped
  • 2 c. Tomatoes, diced
  • 1 c. Feta, crumbled
  • 1/4 c. Olives, sliced
  • 1/4 c. Red onion, diced
  • Avocado Hummus
  • 1/2 c. Chickpeas, cooked
  • 1 ea. Avocados From Mexico
  • 3 T. Avocado oil
  • 2 T. Lemon juice
  • 2 ea. Garlic cloves, minced
  • Salt and pepper, to taste
  • Lemon Vinaigrette
  • 1/4 c. Lemon juice
  • 2 T. Avocado oil
  • 1 t. Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. For the Avocado Hummus: In a blender, add chickpeas, avocado, avocado oil, lemon juice and garlic cloves. Blend until thoroughly combined and salt and pepper to taste.
  2. In a medium bowl, add lemon juice, avocado oil, dijon mustard and salt and pepper to taste. Stir until well combined.
  3. In large bowls, evenly distribute bulgur wheat, chickpeas, cucumber, parsley, tomato, feta, olives, red onion, hummus and lemon vinaigrette
