Add a twist to Taco Tuesday by adding kale, caramelized onion and apple to your taco! Drizzled with a avocado garlic cheese sauce, this pork taco will make a Taco Tuesday to remember!
Ingredients
- For the Pork:
- 1 lb. Pork loin
- 1 ea. Mango, peeled and diced
- 1 ea. Green bell pepper, diced
- 1/2 ea. Yellow onion, diced
- 1/2 ea. Habanero pepper, minced
- 2 T. Honey
- 2 T. Cilantro, chopped
- 1 ea. Garlic clove, minced
- 1/4 t. Chili powder
- 1/4 t. Paprika
- 1/8 t. Orange peel, dried
- To taste, Salt and pepper
- For the Avocado Garlic Cheese Sauce:
- 1/2 ea. Avocados From Mexico, mashed
- 2 oz. White queso, melted
- 1/4 c. Milk, 2%
- 1 ea. Garlic clove, minced
- For the Taco:
- 8 ea. White corn tortillas
- 1 c. Kale, chopped
- 1 ea. Apple, chopped
- 1/2 ea. Onion, chopped
- 2 T. Avocado oil
- 1 T. Lemon juice
- To taste, Cooking spray
Instructions
- For the pulled pork: In a large crockpot, add pork loin, mango, bell pepper, yellow onion, habanero pepper, honey, cilantro, garlic, chili powder, paprika, and orange peel. Cook on low heat for approximately 8 hours or until the pork can easily pull apart and salt and pepper to taste.
- In a medium skillet on medium heat, warm avocado oil and add apple and onion. Cook until caramelized (approximately 10 minutes) while stirring constantly. Add kale and continue stirring for another 5 minutes.
- In a medium bowl, add avocado, white queso, milk and garlic. Stir until well combined and creamy to form the avocado garlic cheese sauce.
- In a small skillet on medium heat, add cooking spray and warm tortillas, one at a time, approximately 30 seconds on each side.
- Transfer tortillas to plates and evenly distribute with pulled pork and apple mixture to make tacos.
- Drizzle the tacos with the warm avocado garlic cheese sauce and serve.
