This burrito boasts of beef, rice, black beans, tomatoes, cheese and more! Layered with guacamole and topped with avocado lime ranch drizzle, you are sure to love every bite of this fresh, authentic burrito!

Ingredients

  • 4 ea. Large flour tortillas
  • 1 lb. Seasoned fajita beef, uncooked and sliced
  • 1 c. Rice, cooked
  • 1 c. Black beans, cooked
  • 1 c. Tomatoes, diced
  • 1/2 c. Mozzarella cheese, shredded
  • 1/2 c. Corn, cooked
  • 1/4 c. Red onion, diced
  • Guacamole
  • 4 ea. Avocados From Mexico, mashed
  • 2 t. Lemon juice
  • 1/2 t. Garlic powder
  • Salt and pepper, to taste
  • Avocado Lime Ranch
  • 1/2 ea. Avocados From Mexico
  • 1/2 c. Milk, 2%
  • 1/2 ea. Ranch seasoning envelope
  • 2 t. Cilantro, fresh
  • 2 t. Jalapeno, minced
  • 1 t. Lime juice
  • Salt and pepper, to taste
  • Cooking spray, as needed

Instructions

  1. In a large skillet on medium-high heat, add fajita beef and cook until brown, approximately 10 minutes (while occasionally flipping).
  2. In a medium bowl, add avocados, lemon juice, garlic powder and salt and pepper to taste. Stir until well combined to form guacamole.
  3. In a blender, add avocado, milk, ranch seasoning, cilantro, jalapeno, lime juice and salt and pepper to taste. Blend to make avocado lime ranch.
  4. In a large skillet on medium heat, add cooking spray and warm tortillas one at a time, approximately 30 seconds on each side.
  5. Transfer tortillas to plates. Evenly distribute with fajita beef, rice, beans, tomato, cheese, corn, onion, guacamole and drizzle with avocado lime ranch. Fold tortilla to form a burrito.
