Ingredients

  • Dry BBQ Rub:
  • 2 T. dry mustard powder
  • 1/2 c. brown sugar
  • 1 t. onion powder
  • 1 t. garlic powder
  • 1 t. smoked paprika
  • 1 t. cayenne pepper
  • 1 t. salt
  • 1 t. pepper
  • Peaches:
  • 1 c. fresh peaches, sliced
  • 1/4 c. Dry BBQ Rub
  • 1 T. vegetable oil
  • Guacamole:
  • 2 ea. Avocados From Mexico, halved, pitted, & peeled
  • 3 T. white onion, finely chopped
  • 2 T. cilantro, finely chopped
  • 2 T. jalapeño or serrano chile, minced
  • 2 T. lime juice
  • 1 t. salt

Instructions

  1. Dry BBQ Rub: In a small bowl, add the spices and mix until well combined.
  2. Peaches: Preheat grill over medium heat; brush with oil. Season peaches with Dry BBQ Rub. Grill for 2 minutes on each side. When cooled, chop roughly.
  3. Guacamole: In a medium bowl, mash the avocados to desired consistency. Fold in the onions, cilantro, jalapeño, lime juice, and salt until well combined. Top with grilled peaches.
