Ingredients
- Guacachurri:
- 1 ea. Avocados From Mexico, diced
- 1 c. fresh parsley, stems removed
- 1/2 c. extra virgin olive oil
- 1/2 c. fresh cilantro, stems removed
- 4 ea. garlic cloves
- 2 T. lime juice
- 1 T. warm water
- 1/4 t. sea salt
- 1/8 t. red pepper flakes, crushed
- Burgers and Mushrooms:
- 4 ea. burger patties, grilled
- 4 ea. burger buns
- 5 ea. cremini mushrooms, thinly sliced
- 1 T. olive oil
- Salt to taste
Instructions
- Place all guacachurri ingredients except the avocado into a food processor, or use an immersion blender, and pulse until herbs and garlic are finely minced.
- Put the blended herb mix into a bowl and add the diced avocado. Mash the mixture with a fork, leaving it chunky. Set aside.
- In a sauté pan, heat the oil on medium high heat. Add mushrooms and sauté until golden brown, approximately 5 minutes. Salt to taste.
- Assemble your burgers. Place a beef patty on the bottom halves of 4 buns. Next, evenly distribute the mushrooms between the 4 burgers. Do the same with the guacachurri mixture, top with other half of bun and serve.
