Ingredients
- 2 ea. Avocados From Mexico, halved, pitted, & peeled
- 1 ea. roma tomato, diced
- 1/4 c. red onion, diced
- 1 T. cilantro, finely chopped
- 2 ea. limes, juiced
- Salt to taste
- Pepper to taste
- Tequila Sauce:
- 1 c. blanco or reposado tequila
- 1 ea. Serrano chile, seeded & minced
- 1/2 c. cilantro
- Salt to taste
- Pepper to taste
Instructions
- Tequila Sauce: In a small saucepan, add the tequila and Serrano chiles; cook over low heat until the Serrano chiles are tender. Remove from heat and place in a blender with the cilantro; blend until smooth. Season with salt and pepper.
- In a medium bowl, mash the avocados until chunky-smooth.
- Fold in tomatoes, onions, cilantro, lime juice, and tequila sauce until well combined. Season with salt and pepper.
