Ingredients

  • Avocado Dough:
  • 2-1/2 c. all-purpose flour
  • 1-1/2 t. salt
  • 1/4 ea. Avocado From Mexico, pitted, peeled, & mashed
  • 1 ea. egg
  • 2 t. olive oil
  • 1/2 c. sparkling water
  • Avo-Cheese Filling:
  • 1/2 c. cream cheese, softened
  • 1/2 ea. Avocado From Mexico, pitted, peeled, & mashed
  • 1/2 c. frozen spinach, thawed & excess moisture removed
  • 1/2 c. feta cheese, crumbled
  • 1/4 c. roasted hazelnuts, finely chopped
  • 2 t. garlic, minced
  • 2 t. cilantro, finely chopped
  • 1 t. salt
  • 1 t. pepper
  • 1/2 t. ground coriander
  • 1/2 t. cayenne pepper
  • 1/2 t. ground fenugreek
  • 1 t. butter, melted
  • Topping:
  • 1/2 c. mozzarella cheese, shredded
  • 4 ea. egg yolks
  • 1 ea. Avocado From Mexico, pitted, peeled, & diced

Instructions

  1. AVOCADO DOUGH: In the bowl of a stand mixer, add the flour, salt, avocado, egg, oil, and water. Mix on low using a paddle attachment until dough comes together and forms a ball.
  2. Remove from bowl and knead on a lightly floured surface for 1 to 2 minutes.
  3. Divide into 4 pieces, cover in plastic wrap, and refrigerate for 1 hour.
  4. AVO-CHEESE FILLING: In a large bowl, add all ingredients and mix until well combined.
  5. TO ASSEMBLE: Preheat oven to 350°F.
  6. Roll each of dough into a 1/4-inch thick rectangle. Brush with butter.
  7. Spoon 1/4 of the avocado spinach mixture on to the center of each rectangle.
  8. Fold the longer sides of the dough towards the center, leaving some filling exposed. Pinch and twist the ends to form a “boat.”
  9. Place the Khachapuri on a lined baking sheet and bake for 20 minutes.
  10. Remove from oven. Make an indentation in the center of the exposed filling of each Khachapuri and place 1 egg yolk. Sprinkle with mozzarella cheese and return to the oven to bake for 5 to 10 minutes until yolk is cooked to desired doneness and the bread is golden brown.
  11. Serve topped with avocados.
