Halloween Blondies

Ingredients

  • 2 Avocados From Mexico, pitted and peeled
  • 1 tablespoon lemon juice
  • 1/4 cup coconut oil, melted and cooled
  • Green Food Coloring (optional)
  • 1/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 11/2 cups all-purpose flour (coconut flour would be great as well)
  • 1/2 cup white chocolate chips
  • Frosting for decorating (brown chocolate and orange)
  • Candy eyes and pretzel sticks for garnish

Directions

  • Preheat oven to 350 degrees and prepare a 9×9 baking dish lined with wax-paper.
  • Using a hand mixer or stand mixer, mix avocados until smooth. Stream in lemon juice, coconut oil, and food coloring if using. Sprinkle in sugars, mixing to incorporate. Add in eggs, one at a time followed by vanilla extract and flour, mixing until incorporated. Fold in white chocolate chips.
  • Press mixture into prepared baking dish and bake for 30-40 minutes until a toothpick comes out clean.
  • Allow to cool for 10 minutes before slicing into rows of 4×3.
  • To decorate, break pretzel sticks and shove into each side of the blondies. Create spooky grin and scar with your frosting, and add candy eyeballs to complete.
