Creamy Parmesan Artichoke and Chicken Guacamole
- Basic Guacamole (recipe above)
- ½ cup cream cheese
- ½ cup grated parmesan
- ½ cup chopped jarred artichokes
- ½ cup chopped cooked chicken
- 2 tablespoons basil, chopped
Street Corn Guacamole
- Basic Guacamole (recipe above)
- ½ cup corn kernels, grilled
- ½ cup cotija/queso fresco cheese
- 2 tsp smoked paprika
- 1-2 limes zested and juiced
Directions
Mash avocados in a bowl, mix in remaining ingredients. Cover and refrigerate until ready to serve.
