Ingredients

  • 2 latas de garbanzos
  • 2 dientes de ajo picados
  • 1 cebolla blanca picada
  • 8 tazas de caldo de pollo
  • 2 pechugas de pollo
  • 2 zanahorias peladas y cortadas en cubos
  • 1 papa grande cortada en cubos
  • 1 lata de judías verdes
  • 2 cucharadas de aceite de oliva
  • 1 ramita de epazote
  • 1 1/2 taza de puré de tomate
  • 2 mazorcas de maíz peladas y picadas en trozos
  • 2 chiles chipotles en adobo finamente picados
  • sal y pimienta al gusto
  • Para servir
  • cilantro picado
  • 1 Aguacate de México hass picado
  • cuñas de limón
  • 1 taza de queso fresco desmoronado

Instructions

  1. En una olla grande agrega el aceite y sofríe la cebolla y el ajo. Agrega el pollo y cocina hasta que se dore.
  2. Luego agrega el caldo de pollo y cocina por 20 minutos.
  3. Remueve el pollo, deja que se enfrie y desmenuza.
  4. En el mismo caldo agrega el maíz, las papas, garbanzos, zanahoria, epazote y cocina por 10 minutos más.
  5. Incorpora las judías verdes, el chile chipotle, puré de tomate y el pollo desmenuzado. Ajusta la sal y pimienta y deja cocinar por otros 10 minutos.
  6. Sirve con el cilantro, aguacate, queso y las cuñas de limón.
