Avocado Chicken Salad

INGREDIENTS

  • 1 lb. Chicken breast, cooked, shredded
  • 2 ea. Avocados From Mexico, cubed
  • 2 c. Grapes, halved
  • 1 ea. Romaine leaf
  • 1/2 c. Avocado oil mayonnaise
  • 2 T. Celery, small diced
  • 2 T. Pecans, chopped
  • 1 T. Lemon juice
  • Salt and pepper, to taste

INSTRUCTIONS

  1. In a medium bowl, add chicken and mayonnaise and stir until well combined.
  2. Add avocado, grapes, celery, pecans, and lime juice. Gently stir until well combined. Salt and pepper to taste.
  3. Top lettuce leaf with Avo Chicken Salad
