Ingredients
- Mango-Avocado Salsa:
- 1 ea. Avocado From Mexico, pitted, peeled, & diced
- 1 ea. medium mango, diced
- 2 ea. scallions, finely chopped
- 1 ea. lime, juiced
- 2 T. mint leaves, finely chopped
- 1 T. sesame seeds, toasted
- 1 t. soy sauce
- 1 t. sesame oil
- 1/2 t. ginger, grated
- Sriracha to taste
- Ponzu to taste
- Salt to taste
- Guacamole:
- 5 ea. Avocados From Mexico, halved, pitted, & peeled
- 4 ea. tomatoes, small dice
- 2 ea. jalapeño, finely diced
- 1 ea. medium red onion, small dice
- 3/4 c. cilantro, finely chopped
- 2 ea. limes, juiced
- Salt to taste
Instructions
- Mango-Avocado Salsa: In a medium bowl, combine the avocados, mangoes, scallions, mint, ginger, lime juice, soy sauce, sesame oil, sriracha, ponzu and sesame seeds. Season with salt to taste.
- Guacamole: In a large bowl, mash the avocados to desired consistency. Fold in the tomatoes, onions, jalapeños, cilantro, and lime juice until well combined. Season with salt to taste. Top with mango avocado salsa and serve.
