Avocado mixed with hummus, onions, tomatoes and cilantro make a great base for yellow bell pepper pico! Made with onion, yellow pepper, tomato and cilantro, it adds a fresh flare to your chip's favorite dip!

Ingredients

  • Yellow Bell Pepper Pico de Gallo:
  • 1-1/2 ea. medium yellow bell pepper, small dice
  • 1-1/2 ea. medium onion, small dice
  • 1 ea. medium tomato, small dice
  • 1 T. cilantro, finely chopped
  • 1 ea. lime, juiced
  • Salt to taste
  • Pepper to taste
  • Hummus Guacamole:
  • 2 ea. Avocados From Mexico, halved, pitted, & peeled
  • 2 T. prepared hummus
  • 1-1/2 ea. small red onion, small dice
  • 1-1/2 ea. small tomato, small dice
  • 1-1/2 T. cilantro, finely chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Yellow Bell Pepper Pico de Gallo: In a medium bowl, add the bell peppers, onions, tomatoes, cilantro, and lime juice; mix until well combined. Season with salt and pepper.
  2. Hummus Guacamole: In a medium bowl, mash the avocados to desired consistency. Fold in hummus, onions, tomatoes, and cilantro. Season with salt and pepper. Top with Yellow Bell Pepper Pico de Gallo.
