Ingredients
- 3 ea. Avocados From Mexico, pitted, peeled, & diced
- 2 ea. crispy fried chicken thighs, finely diced
- 1-1/2 c. spam, finely diced
- 1-1/2 c. fresh pineapple, finely diced
- 3 ea. stalks of scallions, finely chopped
- 1 ea. red bell pepper, finely diced
- 1 ea. Serrano chile, minced
- 1 ea. lime, juiced
- 1/2 t. garlic powder
- Salt to taste
- Pepper to taste
Instructions
- In a large bowl, gently toss the avocados with the chicken, spam, pineapple, scallions, bell pepper, Serrano chile, lime juice, and garlic powder until well combined. Season with salt and pepper.
