Ingredients
- 1/2 c. yogurt
- 2 T. ground coriander
- 3 ea. Avocados From Mexico, halved, pitted, & peeled
- 1 c. green peas
- 1/4 c. mint, finely chopped
- 2 T. chives, finely chopped
- 1 t. sunflower seeds
- 1 ea. lemon, juiced
- Salt to taste
- Pepper to taste
Instructions
- In a small bowl, whisk together the yogurt and coriander until well combined. Set aside.
- In a large bowl, mash the avocados to desired consistency.
- Fold in yogurt mixture, green peas, mint, chives, sunflower seeds, and lemon juice. Season with salt and pepper.
