Ginger and Pistachio Guacamole

INGREDIENTS

  • 1 T. Ginger, fresh, peeled, finely chopped
  • 1 T. Honey
  • 2 T. Lime juice, freshly squeezed
  • 1-2 T. Piquín Chiles, dried, crushed, or chopped
  • 1 t. Kosher or coarse sea salt
  • 3 EA. Avocados From Mexico, halved, pitted, and diced
  • 1/4 C. + 2 T. Pistachios, coarsely chopped
  • 1-2 T. Chives, fresh, chopped

INSTRUCTIONS

  1. In a medium bowl, mix the ginger with the honey, lime juice, dried piquín, and salt until thoroughly combined.
  2. Add the diced avocado, mash and mix.
  3. Add the 1/4 c. of the pistachios and mix until well combined.
  4. Pass to serving bowl and garnish with the remaining pistachios and fresh chives.
