Ginger and Pistachio Guacamole

INGREDIENTS
- 1 T. Ginger, fresh, peeled, finely chopped
- 1 T. Honey
- 2 T. Lime juice, freshly squeezed
- 1-2 T. Piquín Chiles, dried, crushed, or chopped
- 1 t. Kosher or coarse sea salt
- 3 EA. Avocados From Mexico, halved, pitted, and diced
- 1/4 C. + 2 T. Pistachios, coarsely chopped
- 1-2 T. Chives, fresh, chopped
INSTRUCTIONS
- In a medium bowl, mix the ginger with the honey, lime juice, dried piquín, and salt until thoroughly combined.
- Add the diced avocado, mash and mix.
- Add the 1/4 c. of the pistachios and mix until well combined.
- Pass to serving bowl and garnish with the remaining pistachios and fresh chives.
