- 5 c. water
- 1 c. polenta
- 1 c. chicken, cooked and shredded
- 1/2 ea. Avocados From Mexico, thinly sliced
- 1/4 c. salsa
- Prepare the polenta in water, according to package instructions.
- Once the polenta is cooked fully, divide it between two bowls. Top each bowl with half of the shredded chicken, half the avocado slices and half of the salsa. Serve immediately.
