Ingredients
- Egg Rolls:
- 1/2 lb. crab meat
- 1/2 c. Avocados From Mexico, diced
- 1/3 c. white onion, small-diced
- 1/4 c. fresh mango, diced
- 2 T. fresh cilantro, chopped
- 2 T. jalapeño, finely chopped
- 1 T. fresh lime juice
- 1 T. hot sauce
- 1 T. granulated sugar
- 1 t. cumin
- 1 t. kosher salt
- 1 t. ground black pepper
- 6 ea. large egg roll wrappers (or rice paper wrappers for gluten-free option)
- 1 ea. egg
- 4 T. water
- 2 c. peanut or vegetable oil
- Avo Nuoc Cham:
- 1/2 c. warm water
- 6 T. fresh lime juice
- 1/4 c. granulated sugar
- 3 T. fish sauce
- 1/4 c. Avocados From Mexico, small-diced
- 1 t. fresh garlic, minced
- 1 ea. Bird's Eye chili, finely chopped
Instructions
- Prepare egg roll filling: in a large bowl, combine crab meat, avocados, onion, mango, cilantro and jalapeño until combined. Add lime juice, hot sauce, sugar, cumin, salt, and pepper and mix until well incorporated.
- Fill egg rolls: remove egg roll wrappers from package and lay wrappers on a flat surface. Place a heaping scoop of filling in a line in the center of the wrapper. Roll closed like a burrito, folding in the sides and rolling rest of wrapper around the filling, placing the seam at the bottom. Combine egg and water in a small bowl, and using a pastry brush, brush the outside of the egg rolls, placing a bit underneath the seam to secure.
- Cook egg rolls: In a frying pan, heat the peanut oil until it reaches 350°F. Carefully place egg rolls into hot oil, seam-side down, working in batches if needed so as not to crowd the oil. Cook until egg roll is golden brown, then remove and place on a paper towel-lined rack to drain.
- Prepare Nuoc Cham: in a medium bowl, combine warm water, lime juice, sugar, and fish sauce, until sugar is fully dissolved. Add diced avocado, minced garlic, and bird’s eye chili.
- Serve egg rolls sliced in half diagonally with the Nuoc Cham to dip.
