Mexi-Dog Rollups

Ingredients

  • 4 soft whole-wheat taco size low carb tortillas or 4 whole-wheat hot dog buns
  • 1 cup fat-free refried beans
  • 4 reduced fat all-beef franks
  • 1/2 cup reduced fat Mexican cheese blend
  • 1/2 cup Pico de gallo
  • 1 large fully ripened Avocado From Mexico halved, pitted, peeled and slightly mashed
  • Salt and pepper

Instructions

  1. Preheat oven to 350° F.Wrap tortillas in foil and heat in oven until warmed, about 8 minutes. Set aside.
  2. Heat beans in small saucepan over medium heat, adding 2 or 3 tbsp. water if needed to avoid sticking. Warm hot dogs according to package instructions.
  3. Build each dog by spreading one-fourth of re fried beans on each tortilla. Sprinkle on 2 tbsp of cheese blend. Place a hot dog in center of tortilla (or bun) and top with 2 tbsp of pico de gallo. Spoon on a fourth of the mashed avocado. Roll up tortilla, serve and enjoy!
