Ingredients

  • 1/2 c. yogurt
  • 2 T. ground coriander
  • 3 ea. Avocados From Mexico, halved, pitted, & peeled
  • 1 c. green peas
  • 1/4 c. mint, finely chopped
  • 2 T. chives, finely chopped
  • 1 t. sunflower seeds
  • 1 ea. lemon, juiced
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a small bowl, whisk together the yogurt and coriander until well combined. Set aside.
  2. In a large bowl, mash the avocados to desired consistency.
  3. Fold in yogurt mixture, green peas, mint, chives, sunflower seeds, and lemon juice. Season with salt and pepper.
