Ingredients
- 2 ea. queso fresco, slices
- 1 ea. whole grain demi baguette
- 1 ea. roasted red pepper, cut into strips
- 1/2 ea. Avocados From Mexico, diced
- 1/4 c. Kalamata black olives, diced
- 1 T. parsley, finely chopped
- 1 T. butter, room temperature
- Pepper to taste
Instructions
- Combine avocado, olives, parsley and pepper to taste in a bowl. Mix to combine. Set aside.
- Cut baguette in half horizontally and butter both halves. Warm in oven on broil for 1-3 minutes, until desired crispiness.
