Ingredients

  • 4 ea. Avocados From Mexico, halved & pitted
  • 1/2 ea. onion, peeled
  • 2 ea. yellow chiles
  • 1 ea. tomato, small dice
  • 1 ea. garlic clove, minced
  • 1/4 c. cilantro, finely chopped
  • 1/2 ea. lime, juiced
  • 1 T. chipotle mustard
  • 1 t. red pepper flakes
  • 1 t. salt
  • 1/2 t. cumin
  • 1/2 t. sugar

Instructions

  1. Preheat grill.
  2. Brush avocados, onion, and yellow chiles with oil. Place them on the grill and cook for 2 to 3 minutes until slightly charred. When cool enough to handle, cut the avocados into a large dice, and the onion and yellow chiles into a small dice.
  3. In a large bowl, gently toss the avocados with the onions, yellow chiles, tomatoes, garlic, cilantro, chipotle mustard, red pepper flakes, salt, cumin, and sugar until well combined.
