Ingredients

  • 2 Avocados From Mexico
  • 1 1/2 cups cucumber diced
  • 1 large lemon squeezed (or two small)
  • 1/4 tsp cumin powder
  • 1/2 tsp chipotle powder
  • 3/4 tsp salt
  • 1/4 cup cilantro finely chopped

Instructions

  1. Remove pits from avocado and add flesh to a small bowl.
  2. Mash in the fresh lemon juice, chipotle powder, cumin, cilantro and salt.
  3. Then to lighten things up in each scoop, fold in cool diced cucumber. Serve with a fresh lemon garnish and a sprig of cilantro over top.
