Ingredients
- 24 English muffins halved and toasted
- 12 cups Sun-Dried Tomato and Avocado Relish
- 48 crispy prosciutto
- 48 poached eggs
- 6 cups Avocado Harissa Hollandaise
- 1/4 cup Harissa
Instructions
- To assemble one serving: Place the two toasted halves of the English muffins on the plate, then spread each muffin with 1/4 cup Sun-Dried Tomato & Avocado Relish. Top each with a piece of crispy prosciutto. Top each muffin with a poached egg. Spoon 2 tablespoons of Avocado Harissa Hollandaise over each egg. Top each egg with a 1/4 teaspoon of Harissa.
