Ingredients
- 1 ea. Avocados From Mexico, puréed until smooth
- 1-1/4 c. all-purpose flour
- 3/4 c. coconut milk
- 2/3 c. pure maple syrup
- 1/2 c. cocoa powder
- 1/2 c. dried cherries
- 1/3 c. dark chocolate chips
- 1/3 c. canola oil
- 1/4 c. cornstarch
- 1/4 c. peanut butter
- 1 t. baking powder
- 1 t. vanilla extract
- 3/4 t. baking soda
- 1/4 t. salt
Instructions
- Heat your oven to 350°F and line a muffin pan with muffin liners.
- While oven heats, combine all of the dry ingredients in a bowl, including dried cherries and chocolate chips, and whisk until combined.
- In a separate bowl, combine puréed avocado and all other wet ingredients. Mix well. Add dry ingredients to the bowl of wet ingredients and stir until combined.
- Evenly divide the batter into 12 muffin pans and bake for 20-25 minutes.
- Let muffins sit in muffin pan for a few minutes to cool before serving.
