Ingredients
- 2 ea. slices whole grain bread, toasted
- 1 ea. Avocados From Mexico, sliced
- 1/2 c. red beets
- 1/2 c. yellow beets
- 1/2 c. feta cheese, crumbled
- Salt to taste
Instructions
- Bring 2 cups of water to boil in a medium-size pot. Boil beets and salt to taste over high heat for 15 minutes. Once tender, remove from heat.
- Remove skin from beets and cut into cubes. Set aside.
- Next, put half the avocado on each slice of toast and salt to taste.
- Then evenly distribute the red and yellow cubes of beets on top of each slice of toast.
- Crumble 1/4 cup feta cheese on each slice of toast and serve.
