- 1/2 c. sour cream
- 4 ea. hard-boiled eggs
- Salt to taste
- White pepper to taste
- 2 ea. Hawaiian sweet rolls, sliced in half lengthwise
- 4 ea. slices of tomato
- 1 ea. Avocado From Mexico, pitted, peeled, & sliced
- In a blender, add in sour cream, eggs, salt, and pepper; blend until smooth.
- To assemble sandwich, spread egg mixture on both halves of each roll. On the bottom half, layer avocados and tomatoes; cover with top half of roll.
