- 1/4 ea. Avocados From Mexico, diced
- 2 T. cottage cheese
- 1 T. green onions, thinly sliced
- 1 t. olive oil
- 1/4 t. garlic powder
- 1/8 t. red pepper flakes
Instructions
- Heat oil in a small soup pot over medium-high heat. Add spices and stir for 30 seconds.
- Add 1 cup water to the pot and bring to a boil. Stir in the oats and lower heat to medium.
- Add the green onion and stir for 1 minute.
- Add the egg and stir vigorously for one minute until fully incorporated.
- Add half the diced avocado and cottage cheese, stirring to combine for 1 minute. Lower heat to medium-low. Cover with a lid and cook for 3 minutes. Stir and adjust seasoning if necessary.
