  • 3 T. vegetable oil
  • 1 ea. jalapeño, finely diced
  • 1/2 c. onion, small dice
  • 2 c. tomatoes, small dice
  • 6 ea. eggs, beaten
  • 1/2 t. salt
  • 4 ea. flour tortillas, warmed

  1. eat oil in a medium skillet over medium heat. Add jalapeños and onions and cook for 5 to 6 minutes until tender. Add in tomatoes and cook for 4 to 5 minutes, stirring occasionally. Lower the heat to medium-low and pour in the beaten eggs; cook until desired doneness.
  2. o assemble, place 2-3 tablespoons of the scrambled eggs in the center of the flour tortilla; top with slices of avocado and crumbled queso fresco. Roll tightly into a burrito.
