Korean Avocado Kimchi Salad Cups

INGREDIENTS

  • 2 EA Avocados From Mexico, diced
  • 2 c Kimchi, prepared
  • 1 head Butter (Bibb) lettuce), leaves separated
  • 1 EA Carrot, large, grated
  • 1 c Red cabbage, shredded
  • 2 EA Green onions, sliced
  • 1 Tbsp Sesame seeds, toasted
  • 1 EA Lemon, quartered

INSTRUCTIONS

  1. In a medium bowl, mix together the diced avocado, kimchi, and carrot
  2. To serve, top butter lettuce leaves with avocado-kimchi mixture. Top with chopped green onions and sprinkled with toasted sesame seeds. Serve with lemon wedge.
