Ingredients
- 1 c. cold water
- 1 ea. Avocados From Mexico
- 1 ea. shallot, chopped
- 1 ea. radish, chopped
- 1/2 ea. seedless cucumber, chopped
- 2 T. plain yogurt
- 2 T. fresh mint (plus one sprig)
- 4 t. fresh lime juice
- 1-1/2 t. salt
- 1/4 t. ground black pepper
- 1/4 t. ground cumin
Instructions
- Place the avocado, shallot, cucumber, yogurt, 2 tablespoons mint, lime juice, salt, pepper, cumin and 1 cup cold water in a blender, and process until smooth.
- Chill for at least 1 hour.
- Serve garnished with radish and remaining mint leaves.
