  • 1 ea. Avocados From Mexico
  • 1 ea. shallot, chopped
  • 1 ea. radish, chopped
  • 1/2 ea. seedless cucumber, chopped
  • 2 T. plain yogurt
  • 2 T. fresh mint (plus one sprig)
  • 4 t. fresh lime juice
  • 1-1/2 t. salt
  • 1/4 t. ground black pepper
  • 1/4 t. ground cumin

Instructions

  1. Place the avocado, shallot, cucumber, yogurt, 2 tablespoons mint, lime juice, salt, pepper, cumin and 1 cup cold water in a blender, and process until smooth.
  2. Chill for at least 1 hour.
  3. Serve garnished with radish and remaining mint leaves.
