Fresh Guacamole Salad

INGREDIENTS

  • 1.5 Avocado From Mexico, diced
  • 1.5 lb. Skinless chicken breast, cooked, shredded
  • 1 c. Grape tomatoes, halved
  • 1/2 c. Red onion, sliced
  • 1 Jalapeño pepper, seeded, thinly sliced
  • 8 c. Mixed baby greens
  • Dressing
  • 1 c. Fresh cilantro
  • 1 Garlic clove, minced
  • 3 T. Lime juice
  • 2 t. Apple cider vinegar
  • 1 T. Avocado oil
  • 1/2 c. Water
  • 1 t. Honey
  • 1/4 t. Cayenne pepper
  • Salt and pepper, optional

INSTRUCTIONS

  1. Place all dressing ingredients into a food processor and blend until smooth. Store in the refrigerator until ready to serve. Save extra salad dressing for future use.
  2. To prepare salad: In a large bowl, combine chicken, avocado, tomatoes, onion, jalapeño, and baby greens. Top with 4 tablespoons of the dressing and toss lightly until combined.
  3. Serve immediately with a wedge of lime.
